Year 11 Food Technology have had a studious two weeks of food experimentation in preparation for their upcoming assessment task on Food Quality. The students have been investigating the functional properties of carbohydrates, lipids and proteins. They are working towards understanding the factors that affect the functional properties of foods and have been conducting a number of experiments such as emulsification, caramelisation and aeration.
